Made by Yamamasa Koyamaen, it is especially well suited to both koicha and usucha, offering a richer profile while remaining balanced and refined.

Its flavor is defined by layered sweetness, gentle astringency, and a deeper, more structured body than lighter everyday matcha styles. When prepared as koicha, Senjin no Mukashi becomes dense and velvety, with a concentrated character that feels smooth, substantial, and lingering on the palate.

PREPARATION

USUCHA

Rinse the tea bowl and whisk with warm water. Sift 2g of matcha into the bowl. Add 10ml of water to form a smooth paste, then add 50ml more water and whisk vigorously in an “M” motion for 20-30 seconds.

LATTE

Sift 3–5 g of matcha into the bowl. Add 15–25 ml of water to form a smooth paste, then add another 15–25 ml of water and whisk vigorously in an “M” motion for 20–30 seconds. Add 80–120 ml of milk and sweeten to taste.
