This is a high-quality matcha ground using a traditional stone mill. The higher the grade of matcha, the less bitterness it has, with a richer umami flavor. This matcha was served at the tea ceremony during the "Miyako Odori" in Kyoto's Gion district.

PREPARATION
USUCHA
Rinse the tea bowl and whisk with warm water. Sift 2g of matcha into the bowl. Add 10ml of water to form a smooth paste, then add 50ml more water and whisk vigorously in an “M” motion for 20-30 seconds.
LATTE
Sift 3–5 g of matcha into the bowl. Add 15–25 ml of water to form a smooth paste, then add another 15–25 ml of water and whisk vigorously in an “M” motion for 20–30 seconds. Add 80–120 ml of milk and sweeten to taste.
