Koicha, or thick tea, represents the highest expression of matcha preparation in Japanese tea culture. Step-by-Step Preparation
- Warm the chawan and thoroughly dry it
- Measure 3-4 chashaku scoops (3-4g matcha) of premium matcha
- Sift the matcha carefully into the chawan
- Add approximately 1oz (30ml) of water to matcha
- Begin mixing with chasen using gentle, slow movements in a half-circle pattern
